Broccoli Cheese Balls

Instructions:

1. Steam the broccoli florets until tender. Drain and let them cool. Once cooled, finely chop the broccoli and squeeze out any excess moisture using a clean kitchen towel or paper towels.

2. In a mixing bowl, combine the chopped broccoli, shredded cheddar cheese, grated Parmesan cheese, breadcrumbs, minced garlic, chopped green onions, beaten eggs, salt, and black pepper. Mix well until all the ingredients are evenly combined.

3. Shape the mixture into small balls, about 1 to 1.5 inches in diameter, and place them on a baking sheet lined with parchment paper.

4. Heat oil in a deep skillet or pot over medium heat. You’ll need enough oil to deep fry the broccoli cheese balls.

5. Carefully place the balls into the hot oil, a few at a time, and fry them until golden brown and crispy. This should take about 3-4 minutes per batch. Use a slotted spoon or tongs to remove the fried balls from the oil and transfer them to a paper towel-lined plate to drain excess oil.

6. Repeat the frying process with the remaining balls until they’re all cooked.

7. For the optional dipping sauce, in a small bowl, whisk together the mayonnaise, sour cream, Dijon mustard, lemon juice, salt, and pepper until well combined.

8. Serve the Broccoli Cheese Balls hot with the dipping sauce on the side.
