Brazilian Cheese Bread (Pão de Queijo)


1. Preheat your oven to 375°F. Add the tapioca flour to a large bowl and set it aside.
2. In a medium saucepan, combine the butter, milk, and salt. Heat over high heat until it comes to a boil, then remove from heat. Pour this hot liquid over the tapioca flour and mix until smooth. Allow the mixture to rest for 10-15 minutes.
3. After the dough has rested, add the parmesan cheese, cheddar cheese, and eggs. Mix until well combined. The dough will be soft.
4. Drop 1-1/2 tablespoon-sized scoops of dough onto a baking sheet lined with parchment paper or into a greased muffin tin. If desired, grease your hands with oil and gently roll the dough into balls before placing them on the baking sheet.
5. Bake for 10-12 minutes, or until the tops are lightly browned.
6. Serve the Brazilian cheese bread warm and enjoy the cheesy goodness!
