Blueberry Rolls


1️⃣ In a large mixing bowl, combine 2 cups of flour, granulated sugar, salt, and yeast. Add warm milk, melted butter, and beaten eggs. Mix until well combined.
2️⃣ Gradually add the remaining flour, 1/2 cup at a time, until a soft dough forms. Knead the dough on a floured surface for about 5-7 minutes, or until it becomes smooth and elastic.
3️⃣ Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
4️⃣ While the dough is rising, prepare the blueberry filling. In a saucepan, combine blueberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Cook over medium heat, stirring occasionally, until the mixture thickens. Remove from heat and let it cool.
5️⃣ Once the dough has risen, punch it down and roll it out into a rectangle on a floured surface.
6️⃣ Spread the cooled blueberry filling evenly over the dough, leaving a small border around the edges.
7️⃣ Starting from one long side, roll the dough into a tight log. Cut the log into 12 equal slices.
