Blueberry Chocolate Lavender Dream Cake


1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
2. In a bowl, whisk together the flour, baking powder, baking soda, salt, and cocoa powder. Set aside.
3. In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
4. Gradually add the dry ingredients to the creamed mixture, alternating with sour cream and milk, beginning and ending with the dry ingredients. Mix until just combined.
5. Gently fold in the fresh blueberries and dried lavender.
6. Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.
7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer them to wire racks to cool completely.
8. Once cooled, spread blueberry jam over one cake layer. Top with the second cake layer.
9. Frost the top and sides of the cake with cream cheese frosting, swirling in some lavender for flavor and decoration.
10. Garnish with fresh blueberries and lavender sprigs.
11. Optionally, drizzle chocolate ganache over the cake for added decadence.
