Blueberry Cheesecake Bars


Preheat your oven to 350°F (175°C). Line a 9×9 inch baking dish with parchment paper.
In a bowl, mix the graham cracker crumbs and melted butter until well combined. Press the mixture firmly into the bottom of the prepared baking dish to form the crust.
In another bowl, beat the softened cream cheese and granulated sugar together until smooth. Add the eggs and vanilla extract, mixing until fully incorporated.
Pour the cream cheese mixture over the graham cracker crust, spreading it evenly.
Spoon the blueberry pie filling over the cream cheese layer, then sprinkle with fresh blueberries.
Bake in the preheated oven for 25-30 minutes, or until the edges are set and the center is slightly jiggly.
Allow the bars to cool completely in the pan, then refrigerate for at least 2 hours to set.
Once chilled, dust the bars with powdered sugar and cut into squares. Serve each bar with a dollop of whipped cream.
