Blackberry Cheesecake


Prepare the Crust:
Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press the mixture into the bottom of a 9-inch springform pan. Set aside.
Make the Cheesecake Filling:
Beat cream cheese and sugar in a large bowl until smooth. Blend in vanilla.
Add eggs one at a time, beating just until combined. Mix in sour cream and flour until smooth.
Fold in 1 cup of blackberries. Pour the filling over the crust.
Bake at 350°F (175°C) for 50 minutes, or until set. Turn off the oven, open the oven door slightly, and let the cheesecake cool in the oven for 1 hour.
Prepare the Blackberry Sauce:
In a saucepan over medium heat, combine blackberries, sugar, and lemon juice. Bring to a simmer.
Add the dissolved cornstarch. Stir continuously until the sauce thickens. Remove from heat and let cool.
Assemble and Serve:
Once the cheesecake is cool, pour the blackberry sauce over the top. Garnish with additional blackberries.
Refrigerate for at least 4 hours before serving.
