Blackberry Bliss Cheesecake


Instructions:
Prepare the Crust:
Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
In a medium bowl, mix together the graham cracker crumbs, sugar, and melted butter until well combined.
Press the mixture into the bottom of the prepared springform pan, using the back of a spoon to firmly pack it down.
Bake the crust in the preheated oven for 8-10 minutes, then remove and let it cool while you prepare the filling.
Prepare the Filling:
In a large mixing bowl, beat the softened cream cheese and sugar together until smooth.
Add the eggs one at a time, mixing well after each addition.
Stir in the vanilla extract.
Gently fold in the fresh blackberries until evenly distributed throughout the batter.
Assemble and Bake:
Pour the cream cheese filling over the cooled crust in the springform pan.
Smooth the top with a spatula.
Bake the cheesecake in the preheated oven for 45-50 minutes, or until the edges are set and the center is slightly jiggly.
Remove the cheesecake from the oven and let it cool completely at room temperature. Then refrigerate for at least 4 hours or overnight to chill and set.
