Best Shrimp Salad


Bring a medium pot of salted water to a boil and add the quartered lemon.
Prepare a large bowl with ice water for cooling the shrimp after boiling.
Add the shrimp to the boiling water and cook for 2-3 minutes or until pink and opaque.
Drain the shrimp and immediately transfer them to the ice water to stop the cooking process.
Once cooled, drain the shrimp again and pat dry.
In a small bowl, mix together all the ingredients for the dressing until well combined.
In a medium salad bowl, combine the shrimp, celery, and red onion. Pour the dressing over the shrimp mixture and toss gently to coat everything evenly. Season with salt and pepper to taste.
Chill the salad in an airtight container in the refrigerator for a few hours before serving to allow the flavors to meld. Garnish with additional fresh dill when serving.
