berry-layered mousse cake


Directions:
Mix the crushed biscuits, melted butter, and sugar; press into a pan. Chill for 20 minutes.
Simmer cherries, sugar, cornstarch, and water for the compote. Cool and layer over crust. Chill for 30 minutes.
Beat cream cheese, powdered sugar, and vanilla. Spread over compote. Chill for 1 hour.
Combine strawberry puree with gelatin, fold in whipped cream. Pour over cream cheese. Chill for 1 hour.
Repeat step 4 with blueberry puree. Chill for 2 hours.
Garnish with fresh berries and mint leaves before serving.
