Berry Bliss Cheesecake


Directions:
1. Mix the crushed graham crackers, melted butter, and sugar. Press the mixture into the bottom of a springform pan. Chill it in the fridge for 20 minutes.
2. Blend the cream cheese, powdered sugar, and vanilla until smooth. Spread this mixture over the chilled crust. Chill it in the fridge for 1 hour.
3. Puree the raspberries with sugar and lemon juice. Fold this mixture into the whipped cream to make the mousse. Spread the raspberry mousse over the cream cheese layer. Chill it in the fridge for 2 hours.
4. Cook the blackberries and sugar until the berries break down. Add the cornstarch slurry and stir until thickened. Cool this mixture and then pour it over the raspberry mousse layer. Chill it until set.
5. Before serving, top the cheesecake with fresh berries, chopped pistachios, and mint leaves.
