BBQ Chicken Skewer Salad


Instructions:
Preheat your grill to medium-high heat.
In a bowl, mix together BBQ sauce, avocado oil, minced garlic, onion powder, black pepper, and kosher salt. Add chicken chunks and toss until well coated. Allow to marinate for at least 30 minutes.
Thread marinated chicken onto pre-soaked wooden skewers.
Place skewers on the preheated grill and cook for 10-12 minutes, turning occasionally, until chicken is cooked through and slightly charred.
While the chicken is grilling, prepare the salad ingredients. In a large salad bowl, combine chopped romaine lettuce, halved grape tomatoes, black beans, cooked corn kernels, chopped cilantro, basil, parsley, dill, green onions, and diced avocado.
In a separate small bowl, whisk together coconut milk, lemon juice, red wine vinegar, and light-tasting oil until well combined. Season with salt and pepper to taste.
Once the chicken skewers are done, remove them from the grill and let them cool slightly.
To assemble the salad, place a portion of the salad mixture onto each plate. Top with grilled BBQ chicken skewers.
Drizzle the dressing over the salad or serve it on the side.
