BBQ Chicken Skewer Salad

Ingredients:
For the BBQ Chicken Skewers:
2 lbs Chicken breasts, boneless, skinless, cut into chunks
2 cups BBQ sauce
2 tbsp Avocado oil
2 cloves Garlic, minced
1 tsp Onion powder
1 tsp Black pepper, freshly cracked
2 tsp Kosher salt
8 wooden skewers (pre-soaked in water)
For the Salad:
8 cups Romaine lettuce, chopped
2 cups Grape tomatoes, halved
1 15-ounce can Black beans, drained and rinsed
4 ears Corn, cooked and kernels removed
1/4 cup Fresh cilantro leaves, chopped
2 tbsp Fresh basil leaves, chopped
1/4 cup Fresh parsley leaves, chopped
1/4 cup Fresh dill fronds, chopped
6 Green onions, chopped
1 Avocado, peeled, seeded, and diced medium
For the Dressing:
1/2 cup Unsweetened full-fat coconut milk
2 tbsp Lemon juice
1 tbsp Red wine vinegar
1 cup Light-tasting oil (such as vegetable or grapeseed oil)
Salt and pepper to taste
