Bay Lobster Eggs Benedict with Cajun Hollandaise

Ingredients:
For the Cajun Hollandaise:
3 Egg yolks
3/4 cup Butter, melted
3 tbsp Lemon juice
1/4 tsp Cayenne pepper
1/2 tsp Smoked paprika
Salt and pepper to taste
For the Eggs Benedict:
3 Moreton Bay bugs or bay lobsters, cooked whole
16 Asparagus spears, fresh
4 Eggs
1 tbsp Capers
2 tbsp White vinegar
2 English muffins, split and toasted
Fresh dill, for garnish
1/4 tsp Chili powder (optional, for extra heat)
