Baked Spinach Mushroom Quesadillas



Directions:
1. Preheat the oven to 400°F (200°C).
2. Place the mushrooms in a microwave-safe bowl and microwave for 2 ½ to 3 minutes to soften them. Drain the mushrooms and set aside.
3. Lightly brush one side of each tortilla with olive oil (optional) and place them on a baking sheet, oiled side down.
4. Distribute half of each type of cheese over half of each tortilla. Layer spinach, mushrooms, and the remaining cheese over the top. Fold the other half of the tortilla over the filling.
5. Bake the quesadillas for about 6 minutes, then carefully flip each over and bake for another 6-7 minutes, until the cheese is melted and the outside of the tortillas are lightly browned.
6. Garnish with additional mushrooms and cheese if desired before serving.
